After years of exploring some of the most sophisticated territories in gastronomy, Ramón Freixa has decided to look inward: toward memory.

Or rather, toward those emotions that remain alive long after a meal has ended and refuse to be forgotten. This is how Tradición was born, his new gastronomic project in Madrid, a restaurant where luxury is not measured by extravagance or spectacle, but by time, product, hospitality, and the ability to reconnect diners with authentic flavours.

“It appealed to me to create a new kind of project,” explains the chef. “A place that perfectly reflects the essence of this project: warm cuisine, emotional and deeply connected to culture and gastronomy. Because to me, luxury today lies in tradition and in recovering and rediscovering those authentic flavours from childhood.”
The idea is both simple and profound. Rather than presenting tradition as something nostalgic or outdated, Freixa elevates it, demonstrating that the recipes and culinary customs passed down through generations can still offer one of the most refined dining experiences imaginable.

“The memory is the best book of recipes there is,” he adds. And in that memory, many of the dishes from his childhood inevitably emerge. He fondly recalls the cannelloni served on Sant Esteve, a traditional Catalan celebration, as well as hearty chickpea stew with pork trotters and meatballs. Equally present are the memories of his Galician grandmother and her octopus-and-potato dish, a preparation that became a genuine lesson in cooking and in understanding the importance of simplicity.
Those family recipes are not reproduced literally on the menu. Instead, they serve as an emotional foundation for a cuisine that seeks to awaken familiar sensations in every guest. The result is a dining experience that feels deeply personal while remaining sophisticated and contemporary.

“Sometimes we forget that it is enough to create and discover that everyday cuisine can still move us,” he reflects.
